Sweet Potato Pie

- 1 can Princella Mashed Sweet Potatoes (15 oz)
- ½ cup sugar
- 2 eggs
- ½ cup evaporated milk
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 unbaked 9-inch pie crust
Preheat oven to 375°F.
In a medium bowl, combine Princella Mashed Sweet Potatoes, sugar, eggs, evaporated milk, cinnamon, and vanilla. Mix until smooth.
Pour the filling into the unbaked pie crust.
Bake for 45 minutes, or until the center is set and a knife inserted near the middle comes out clean.
Cool completely before slicing.
Serve as-is or with a dollop of whipped cream for a holiday-perfect finish.
