Savory Sweet Potato & Sausage Stuffing

A hearty stuffing with sausage and sweet potatoes

Ingredients

  • cups Princella Cut Sweet Potatoes, cubed (1 – 15 oz can, drained)
  • 1 lb sausage, browned (pork or turkey)
  • 4 cups cubed bread (day-old preferred)
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • salt & pepper to taste

Instructions

  • Preheat oven to 375°F.
  • In a skillet, cook sausage and onion over medium heat until sausage is browned; drain excess fat.
  • In a large mixing bowl, combine the sausage mixture with bread cubes and Princella Sweet Potatoes.
  • Pour in the chicken broth and add sage, thyme, salt, and pepper. Gently toss until evenly moistened.
  • Transfer mixture to a greased 9x13-inch baking dish.
  • Bake uncovered for 30 minutes, or until golden and heated through.
  • Serve warm as a hearty Thanksgiving side dish.
