Savory Sweet Potato & Sausage Stuffing

A hearty stuffing with sausage and sweet potatoes

- 1½ cups Princella Cut Sweet Potatoes, cubed (1 – 15 oz can, drained)
- 1 lb sausage, browned (pork or turkey)
- 4 cups cubed bread (day-old preferred)
- 1 onion, chopped
- 2 cups chicken broth
- 1 tsp dried sage
- 1 tsp dried thyme
- salt & pepper to taste
Preheat oven to 375°F.
In a skillet, cook sausage and onion over medium heat until sausage is browned; drain excess fat.
In a large mixing bowl, combine the sausage mixture with bread cubes and Princella Sweet Potatoes.
Pour in the chicken broth and add sage, thyme, salt, and pepper. Gently toss until evenly moistened.
Transfer mixture to a greased 9x13-inch baking dish.
Bake uncovered for 30 minutes, or until golden and heated through.
Serve warm as a hearty Thanksgiving side dish.
