Ingredients

  • 1 can Princella Mashed Sweet Potatoes (15 oz)
  • ½ cup sugar
  • 2 eggs
  • ½ cup evaporated milk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 unbaked 9-inch pie crust

Instructions

  • Preheat oven to 375°F.
  • In a medium bowl, combine Princella Mashed Sweet Potatoes, sugar, eggs, evaporated milk, cinnamon, and vanilla. Mix until smooth.
  • Pour the filling into the unbaked pie crust.
  • Bake for 45 minutes, or until the center is set and a knife inserted near the middle comes out clean.
  • Cool completely before slicing.
  • Serve as-is or with a dollop of whipped cream for a holiday-perfect finish.
